The oven Should be ready 30 minutes prior to open so give yourself two hours to detail it.  you can remove the racks, clean them separately, and then wipe down the inside of the oven. You can use a commercial oven cleaner or a mixture of hot water and GreaseLift. (for better result use EASYOFF)


Step 1: Remove screws that hold the oven panels


Step 2: Remove conveyor belt and Air Fingers and oven panels


Step 3: Place parts on the sink area and apply Commercial Oven Cleaner
Step 4: Let Cleaning Solution Sit for 20 minutes (5 minutes if using EASYOFF)
Step 5: Wash the grease lift off with water


Step 6: Apply Degreaser and Scrub Oven Surfaces with Scrubbing Pad (only one direcction Left and Right)
Step 7: Wipe Down Surfaces with clean Cloth as your scubbing, dont let degreaser dry
Step 8: Put conveyor belt, air fingers and oven panels back together


Step 9: Clean the main panel with a towel and blow any dust.
Step 10: Apply only one stroke of High Temp Grease lithium base with a grease gun to the bearings behind the oven.


Step 11: Close Panels, turn the Oven on and test Temp and Time of the oven

Step 12: Test Oven and write the date cleaned and your Done

NOTE: You should clean all the areas you use. Its not the Cast Members duty to clean after you.
